August is a fabulous vegetable garden month for many of us. Hopefully, the late summer crops are overwhelming us with their productivity (think fresh, juicy vine-ripened tomatoes, string beans, and cucumbers) and last month’s crops are continuing to spoil us. You can’t beat fresh picked garden greens to go along with those tomatoes and cukes. I say let’s squeeze every bit of summer out of August with this light yummy salad dressing that can also serve as a marinade all year long. Great with those summer stir-fries, too.
